Description

healthy meatsauce with vegetables that are nicely disguised

Ingredients

3 c
tomato puree ((I use homemade))
1  
large red onion (peeled, halved)
8 clv
garlic (more or less, to taste (I like more))
3 T
extra virgin olive oil
1 lb
ground grass-fed beef
1  
med zucchini (trim ends)
1  
carrot (raw, peeled)
2 cn
organic tomato paste
2 T
Italian seasoning
   
sea salt and black pepper (to taste)

Instructions

Heat the olive oil in a large frying-pan, add ground beef and scramble-fry until starting to brown. In the meantime, grate onion, carrot, zuchini and garlic (in food processor or by hand). Sprinkle with some salt, then put in large sieve, press and let drain some.  When ground beef is ready, add vegetables and cook until nearly soft. Add tomato puree, Italian seasoning and tomato paste, simmer for about 10 min more until flavors melt. Sason with sea salt, black pepper and a little sweetener of choice (optional).

 

Notes

Serve with spaghetti or penne pasta and freshly grated parmesan cheese.
