Grain-free, gluten-free banana bread or muffins

Grain-free, nut-free, gluten-free, can be also dairy-free

Banana bread or muffins


3⁄4 c
mashed ripe bananas (2-3 fresh, or frozen and thawed)
1⁄4 c
coconut oil, melted
1⁄4 c
milk (almond or other nut or coconut milk for dairy-free)
2 T
raw honey
1⁄2 t
pure vanilla extract
1⁄2 c
coconut flour
1 t
ground cinnamon
1⁄2 t
baking soda


Preheat oven to 350F.

Combine wet ingredients (eggs until vanilla extract) (with masher or hand mixer) in a bowl

In 2nd bowl, whisk together dry ingredients (coconut flour, cinnamon and baking soda).

Add dry mix to wet mix, mix until smooth.

Drop into greased (e.g. with coconut oil) loaf pan

or spoon in muffin tins or mini muffin tins.

Bake: for loaf: ~40-45 min

for muffins: ~20-25 min

bake until toothpick comes out clean.

Cool in pan for a few minutes on cooling rack, then unmold loaf or muffins and cool completely on cooling rack.


cooking times vary with different ovens and muffin or loaf pan pan types. It is best to insert a toothpick (or bamboo skewer) in the center and look. If it comes out clean, the loaf or muffins are done.
