Banana bread or muffins
Preheat oven to 350F.
Combine wet ingredients (eggs until vanilla extract) (with masher or hand mixer) in a bowl
In 2nd bowl, whisk together dry ingredients (coconut flour, cinnamon and baking soda).
Add dry mix to wet mix, mix until smooth.
Drop into greased (e.g. with coconut oil) loaf pan
or spoon in muffin tins or mini muffin tins.
Bake: for loaf: ~40-45 min
for muffins: ~20-25 min
bake until toothpick comes out clean.
Cool in pan for a few minutes on cooling rack, then unmold loaf or muffins and cool completely on cooling rack.
cooking times vary with different ovens and muffin or loaf pan pan types. It is best to insert a toothpick (or bamboo skewer) in the center and look. If it comes out clean, the loaf or muffins are done.
