Spinach with Pumpkin seeds and red onion

Description

nice as a side dish or light entree

Ingredients

1 lb
organic curly-leaf spinach (remove tough stems)
2 T
avocado oil (or coconut oil or olive oil)
1⁄4 c
org. pumpkin seeds (toasted, if desired)
1⁄4 c
red onions, chopped (or green onions, chopped)

Instructions

Wash spinach, coarsely chop or tear.

Heat the oil in a skillet, add red onions, cook until translucent.. Add spinach, toss,  until just wilted. Add pumpkin seeds, add himalayan salt and freshly ground black pepper to taste.

Notes

you can use pine nuts, chopped walnuts or cashews instead of pumpkin seeds, if desired
