Garlic scape pesto

Description

A pesto made with garlic scapes. Spicy, fresh and tasty. Good with meat or as a dip for veggies. Or as sandwich spread. Or add to sauces and pasta.

Ingredients

10  
large garlic scapes (approximately 100g)
1⁄3 c
pine nuts, unsalted (or cashews, pistachios, almonds...)
1⁄3 c
grated parmesan cheese
1  
Salt and pepper to taste (approximately 1/2 teasp. salt, 1/4 teasp. pepper)
1⁄3 c
extra virgin olive oil
1⁄3 c
lemon juice (adjust to taste)
1  
water as needed to thin

Instructions

Roughly chop garlic scapes.

Add all ingredients to high-powered blender, puree until smooth.
