Soft and fluffy banana bread squares that will fill you up!
1. In a large bowl mash the bananas with a fork. Mix in the plant milk, vinegar, vanilla, and brown sugar.
2. Add the rolled oats, flour, raisins, cinnamon, and baking soda. Stir until all ingredients are mixed well.
3. Scoop out the mixture onto a baking sheet or cake pan lined with parchement paper. Smooth out the batter until its about 1/2 inch thick.
4. Bake at 350F for 15 minutes. Remove from the oven and allow to cook for 15 minutes before slicing into squares.
Feel free to add other mix-ins such as pumpkin seeds, dried cranberries, flaked coconut, or even chocolate chips! These make a great quick breakfast or even a snack in between meals.
